Professor Jana Hajšlová, Head of the Department of Food Analysis and Nutrition at the University of Chemistry and Technology, Prague, discusses her work on food authentication and safety testing. Apart from food authentication, Prof. Hajšlová's research focuses on food contaminants, such as fluorinated compounds leaching from different packaging materials, and MCPD esters.

Professor Jana Hajšlová is Head of the Department of Food Analysis and Nutrition at the University of Chemistry and Technology, Prague. Since 2000 she has been Head of Accredited Laboratory (ISO 17025) focused on analysis of food and environmental contaminants, toxicants and biologically active compounds.
